Instead of using a microwave, I sautéed the onion and added iii diced jalapeños. I used one tin can of refried beans and ane tin can of refried blackness beans. I added the beans and cheese to the pan with the onions and jalapeños and heated until the cheese melted. Subsequently tasting the edible bean/cheese mixture, I wanted to spice it up a bit. So I added some chili pulverisation, cumin, and hot taco sauce.

I fabricated these exactly past the recipe for a small-scale group of 14. Everyone seemed to like them, but no one raved over them. I appreciated the directions given for heating 3 corn tortillas in the microwave so dipping them in the enchilada sauce earlier filling and rolling upward. I've e'er had problems with corn tortillas breaking, only these rolled upward perfectly.

Great decorated weeknight dinner. I had actress from making tiresome cooker refried beans from this site and used them up on this. I didn't microwave the beans and cheese together first, but poured a thin layer of enchilada sauce in the blistering dish, added my rolled flour tortillas with edible bean/cheese filling, and so poured more enchilada sauce and topped with cheese. Loved that I could feed the vegetarian stepdaughter as well as others.

I added some extra onion and a whole package of cream cheese with the grated cheese because I like cheese and onions so much. Also, I used two cans of medium cerise enchilada sauce since my batch made up into enough mix for a pan and a half of enchiladas. Added some sour cream on peak after they cooled a fleck, and ate with saltine crackers. Very very good! A new favorite hither, and so piece of cake to brand that this volition be a regular. (If you want to bring an empty dish domicile from a pot luck, accept it total of these.) :)

These are great without meat or poultry and come quite close to that original texmex taste if you make your ain enchilada sauce. What is missing is the sauce recipe otherwise i would have given it v stars.

Peachy base recipe. I prefer flour tortillas, and they piece of work very well (you lot don't have to microwave them start, just gear up them on the counter while y'all're preparing the filling and pan). I double the amount of cheese - 2 cups get into the filling, and ii cups go on top. For me this makes 2 ix"x12" pans, or 12 enchiladas total.

My family unit loved this. I sauteed the onion and then mixed the beans and cheese on the stove peak rather than microwaving. I added some shredded craven to half the enchiladas for the meat eaters. Otherwise made the recipe every bit written. It was fantastic to have a meal that made the vegetarians and meat-eaters in my family unit happy. I'm non sure if I'd say it'due south five stars in terms of taste, just it was very adept so easy that I know we will make it once again and again - and that's a special kind of five stars. Thank you!

I made information technology but these were my changes. Greenish enchilada sauce instead of red. 3 cups added shredded chopped chicken to bean mixture. Added side dish Jasmine rice 2 cups 1 tablespoon garlic salt 1 teaspoon dried parsley 1 teaspoon olive oil in a rice cooker dainty fluffy non sticking rice.
